Today I have a great surprise for you, a new recipe for Who’s Hungry?…sooo delicious: “Raspberry Vanilla Cupcakes”.
My super blonde Elizabeth Minnett has created this cupcake just for us, really really really thanks…
Are you ready?

8 Tblsp (about 125g) butter, at room temperature
1 cup granulated sugar
1 large egg, at room temperature
2 large egg yolks, at room temperature
1/2 cup plain yoghurt
2 tsp vanilla extract
1.5 cups flour
1.5 tsp baking powder
1/2 tsp salt
1/2 cup raspberry jam

8 cucchiai (circa 125g) di burro, temperatura ambiente
1 tazza di zucchero
1 uovo a temperatura ambiente
2 a temperatura ambiente
1/2 mezza tazza di yogurt magro
2 cucchiaini di estratto di vaniglia
1.5 tazza di farina
1.5 cucchiaino di lievito
1/2 cucchiaino di sale
1/2 tazza di confettura di lamponi


Preheat oven to 350F/180C. Line a cupcake tin (for 12 cupcakes) with cupcake liners.
In a stand-mixer, or with electric beaters, beat the butter and sugar until smooth. Add the egg yolks, whole egg and combine until smooth. Finally add the yoghurt and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt. While the beaters are still going, slowly add the flour mixture to the wet. Beat until you get a smooth batter.
Divide batter evenly among the cupcake liners. Bake for 20-25mins, or until just golden on top. Remove from oven and allow to cool completely.
Once the cupcakes have completely cooled, cut a round hole in the top of each, and fill the holes with raspberry jam. Place the cupcake circle that you cut out back on top (you might have to cut off some excess cake to fit over the jam.)
Then frost the cupcakes!

Vanilla Buttercream Frosting:
1/2 cup soft butter (about 125g)
3 cups icing sugar
1 tsp vanilla extract
red food colouring
12 raspberries

With electric beaters, beat the butter, vanilla, and icing sugar until smooth and creamy. Drop 1 drop (not more!) of red food colouring into the frosting and mix until the colour turns a light pink. Frost each cupcake and top with a raspberry.
Makes 12 cupcakes.

Preriscaldare il forno a 180C. Creare le formine per i cupcakes (for 12 cupcakes).
In un miscelatore elettrico o con le fruste, sbattere il burro e lo zucchero fino ad ottenere un composto omogeneo. Aggiungere i tuorli d’uovo, le uova intere ed anche qui miscelare il tutto fino ad ottenere un composto omogeneo. Infine aggiungere lo yogurt e l’estratto di vaniglia.
In un altro recipiente mescolare la farina, il lievito in polvere e il sale. Durante la miscelatura aggiungere lentamente la farina. Sbattere fino ad ottenere un impasto del tutto omogeneo.
Dividere l’impasto in modo uniforme tra i cupcake creati. Cuocere in forno per 20/25 minuti o finché il bordo dei dolcetti non è dorato. Togliere dal forno e lasciare raffreddare completamente. Non appena raffreddato il tutto, tagliare un foro circolare nella parte superiore di ogni cupcake e riempire i fori con laconfettura di lamponi. Il foro va fatto sulla parte superiore del tortino (potrebbe essere necessario tagliare alcuni pezzi del cupcake per inserire la marmellata all’interno)
Ora…glassare le tortine!

Glassa di crema alla vaniglia:
1/2 tazza di burro morbido (circa 125g)
3 tazze di zucchero a velo
1 cucchiaino di estratto di vaniglia
Colorante rosso per cibo
12 lamponi

Con le fruste elettriche montare il burro, la vaniglia e zucchero a velo fino ad ottenere un composto omogeneo e cremoso. Versare solo 1 goccia (non di più!) di colorante nella glassa e mescolare fino a quando il colore diventa rosa chiaro. Raffreddare ogni tortina e guarnire nella parte superiore con un lampone.
Ed ecco pronti i 12 cupcakes.
